Israel has numerous micro-climates and vineyards all over the country. An overwhelming majority of the producers are sourcing their grapes from a variety of vineyards in different locations to suit their needs. Sometimes they lease and control the vineyards, and sometimes they use independent growers. So, while a winery may be located in the southern Judean hills, they may very well be using grapes from the northern galil.
With that said, there are a few major areas where high quality noble varietal grapes are being grown. Due to the higher altitude and heavily volcanic soils, the northern Galil and Golan Heights boast some of the very best growing areas in the land. It is nearly impossible to drive across the northern parts of the country without seeing a vineyard at every turn.
